Mac'n'Cheese

Ingredients

Serves 4

50g melted butter

50g flour

1 pint milk

1/2-1 onion

300g macaroni

2 handfuls of grated cheese

Bacon/ham/gammon (optional)

Cherry tomatoes (optional)

Method

First, cut the onion in half, grate the cheese, dice the bacon/ham/gammon (if raw, bacon and gammon will need to be cooked first) and cut the tomatoes into quarters.

Add a pinch of salt and boiling water to a pan and cook the macaroni.

Heat the oven to 220C/fan 200C/gas 7.

While the macaroni is cooking, melt the butter in a pan. Once the butter has melted, turn off the heat and mix in the flour.

When the butter and flour are well mixed, turn the heat back on low and gradually add the pint of milk. Then add the onion (whole or half - not diced!). Whisk for 15-20 mins until thickened. Once thickened, turn off the heat and stir in a handful of cheese and season with salt and pepper.

Put the cooked macaroni, bacon/ham/gammon, and tomatoes into an oven dish and mix. Then pour the sauce into the oven dish and mix it in. Finally, sprinkle the second handful of cheese on top and cook in the oven for 15-20 mins until hot and golden brown on top.
